I just grabbed a cheap bag of Bairds Brown with my last bulk buy.
Any ideas on what to do with it?

It might take you a while to get through a bag of brown malt but I would also go for a porter.

I can vouch for the Fuller's London Porter recipe which is freely available on line, it comes out great. This is from byo.com and from the head brewer:

Fuller’s London Porter clone
(5 gallons/ 19 L, all-grain)
OG = 1.054 FG = 1.014
IBU = 30 SRM = 46 ABV = 5.4%

8.27 lbs. (3.75 kg) Muntons pale ale malt
1.0 lb. (0.45 kg) crystal malt (75 °L)
1.5 lbs. (0.68 kg) brown malt
0.75 lb. (0.34 kg) chocolate malt

Fuggle hops 37 g of 4.7% alpha acids (60 min)
Fuggle hops 19 g of 4.7% alpha acids (15 min)

Wyeast 1968 (London ESB) or White Labs WLP002 (English Ale) yeast

Mash at 153 °F (67 °C). Ferment at 62 °F (17 °C).

Alternatively a stout. There are lots of historic English stout recipes, Ron Pattinson's blog ‘shutupaboutbarclayperkins’ is a great source.

I’m under the impression that with brown malt less is more.

What about a weird brown malt accented saison???? Nah that won’t work.

Nut Brown, American Brown, English Pale/ Mild, Stout, Porter.
It was so cheap it was free.

I've got some of this malt in a bucket here too, probably should look at putting it in something with winter approaching. Might do a brown ale or something in place of my red ale.

Still got over 18 kgs of brown malt been sitting there for 2 years…..

I agree use less is best

And try a TADCASTER TADDY PORTER before you buy this malt because thats the best example one will ever drink using this malt

Threw 250g in a pale (ish) and could really smell it but a hydro taste had nothing. So we'll see.
